Aquest espai de di\u00e0leg cient\u00edfic per al p\u00fablic general, analitzar\u00e0 la fascinant relaci\u00f3 entre cuina i ci\u00e8ncia i, aspectes derivats, com ara la seva influ\u00e8ncia en la nutrici\u00f3 i la salut. L\u2019acte es far\u00e0 en catal\u00e0.<\/p>\n\n\n\n<p>Actualment, la cuina i la ci\u00e8ncia convergeixen en un terreny apassionant on es combinen sabors, textures i processos qu\u00edmics. La cuina \u00e9s un laboratori experimental on es produeixen reaccions i transformacions en els aliments. La ci\u00e8ncia, alhora, aporta coneixements sobre la f\u00edsica, la qu\u00edmica i la biologia implicades en la preparaci\u00f3 del menjar. Els xefs moderns s\u2019inspiren en la ci\u00e8ncia per entendre millor els processos culinaris i innovar, utilitzant t\u00e8cniques per crear plats que combinen art i ci\u00e8ncia.<\/p>\n\n\n\n<p>La fusi\u00f3 entre cuina i ci\u00e8ncia no nom\u00e9s impulsa la creativitat culin\u00e0ria, sin\u00f3 que tamb\u00e9 ofereix oportunitats per comprendre millor els aliments, la nutrici\u00f3 i la salut d\u2019una manera m\u00e9s precisa i informada. Un proc\u00e9s que genera interrogants als quals respondran, des d\u2019ambdues disciplines Pep Romany i Juli Peret\u00f3. Fins on pot arribar i com evolucionar\u00e0 la interrelaci\u00f3 entre ambd\u00f3s mons? Quina ser\u00e0 la seva transcend\u00e8ncia a l\u2019hora de millorar o adaptar a l\u2019entorn futur la nostra nutrici\u00f3 com a element de millora de la salut?<\/p>\n\n\n\n<p>L\u2019AE-BKH va iniciar l\u2019octubre de 2023 un nou espai de di\u00e0legs cient\u00edfics a Barcelona amb dues modalitats diferents: d\u2019una banda, un format d\u2019alt nivell cient\u00edfic en angl\u00e8s, i, de l\u2019altra, en catal\u00e0\/castell\u00e0 de divulgaci\u00f3 cient\u00edfica, l\u2019\u00c0gora Ciutadana.
